You can find info on Ontario trails at www.ofsc.on.ca. Not sure about the rest of Canada.

Just scoll down there is a listing near the bottom of clubs from Canada as well as the United States

There is also a trail conditions reporting page on this site once winter gets rolling as well as on other sledding sites ( sorry can't mention any names )
