I have a 2002 MXZ 700 with an 0.880" track. I can get a good deal on Roetin studs, but the problem is that the length of the stud is 1.125". Is this too long for my track?

Too long, you'll rip up your track. :)

Typically 1/4''-3/8'' above lug height is what you want to go.
