Looking for a setup for a buddy of mine that wants to try grass dragging. here are his specs.

Me - 250.

My aggressive chassis Polaris is a 1998 XCR-700 non VES,

Stock gears. Basically everything else on the sled is stock as well.

I'm looking to do 500 foot drags in a couple weeks and need a little help with clutching.

Perfect scenario - what would I need where?

Gear it down. I don't know your stock gearing, but you need to get it to full shift out in 500 ft.

Other than that, most drag setups are won or lost with suspension setup. As far as clutching goes, typically a couple more degrees of helix out of the hole is the trick to getting it to run the first 60 feet.
